Banana & Walnut Muffins

Ingredients:

 

Makes 6 small muffins 

 

2 ripe bananas 

2-3 tablespoons of almond milk 

100g oat flour (any flour should work)

50g oats

30g coconut sugar 

1/2 teaspoon bicarbonate of soda

1/2 teaspoon baking powder 

1/2 teaspoon cinnamon 

A handful of walnuts

 

Method:

 

Preheat the oven to 180 degrees & either line or grease a 6/12 muffin tray (i used a tiny amount of coconut oil to line mine.

 

Very simple! Mix all of the dry ingredients together, then all of the wet ingredients and add to either muffin cases. Bake for 20-30 minutes, check if they are cooked with a clean knife.

 

Allow to cool if you can, and enjoy!
