Simple Breakfast Bircher 

​

Here is a super quick, fibre and protein packed breakfast that will have you energised for the day ahead! It takes 2 minutes to put together and you can get creative with your toppings depending on what you like. It is so easy, no cooking required!

Recipe: 1 serving

​

  • 1/2 cup oats 

  • 1/2 tsp cinnamon

  • 2tbsp coconut yogurt (other yogurt alternatives would work too)

  • 1 cup oat milk (any alternatives will also work)

  • Maple syrup - to taste 

  • 2-3 tbsp orange juice (optional)

  • 1tbsp chia seeds

Method

Combine all of the ingredients into a bowl & stir well, leave to soak for 1/2 hour or so or overnight for a creamier thicker bircher
 

Toppings include fresh fruit, stewed fruit, granola, seeds, maple syrup, peanut butter- whatever you fancy! 
 

You may need to play around with the ratios depending on what oats you are using, some soak up liquid much quicker! You can also use water for the liquid if you do not like milk etc.

Recipe
makes 8-10 cookies depending on your size! 

2x bananas
1/2 cup dates soaked in water 
1tsp baking powder 
1/4-1/2 cup dark chocolate chips (or cut up chocolate!)
1 cup rolled oats 
1 cup of oat flour (just blend your oats to make this)
1/2 cup nut butter 
1st vanilla extract

Method 
Pre-heat your oven to 180 degrees 

Mash your bananas & blend the dates with the water they are soaked in
Mix all ingredients in a bowl, adding a little milk if your mixture is too dry. 
Scoop even amounts of the batter onto a baking tray, cook for 20-25 mins until they are golden & crispy. Less if you like soft cookies!

Ingredients:
Makes 6 small muffins 

2 ripe bananas 
2-3 tablespoons of almond milk 
100g oat flour (any flour should work)
50g oats
30g coconut sugar 
1/2 teaspoon bicarbonate of soda
1/2 teaspoon baking powder 
1/2 teaspoon cinnamon 
A handful of walnuts

Method:

Preheat the oven to 180 degrees & either line or grease a 6/12 muffin tray (i used a tiny amount of coconut oil to line mine.

Very simple! Mix all of the dry ingredients together, then all of the wet ingredients and add to either muffin cases. Bake for 20-30 minutes, check if they are cooked with a clean knife. Allow to cool if you can, and enjoy!
