Cacao & Peanut Butter Energy Balls
These are full of fibre and healthy fats keeping you full and energised throughout the day!
Recipe- 10-12 serving (depending on how big your balls are!)
1 cup soaked oats (you can use medjool instead- these won't need soaking)
1-2 tbsp cacao/cocoa powder
1-2 tbsp peanut butter, smooth or crunchy works here- I use crunchy for that extra bite!
Blend all of the ingredients together- you may need to stop and scrape down the sides intermittently!
You can experiment with the ratios here, it will all depend on how soft the dates are. I will play around with the recipe and include oats, chopped nuts, a tbsp of protein powder or even dark chocolate chips! If the mixture is too dry you can add a tsp of water at a time to help blend.
These come out like a gorgeous truffle! For the ones pictured I rolled them in coconut and chopped nuts.
