Plant Based Pancakes

Makes 6 medium pancakes
Prep time: 5 mins
Cook time: 10 mins
Ingredients:
100g plain flour (oat works well too)
130ml milk (I use oat or soy)
1.5 tsp baking powder
1-2 tbsp maple syrup
1 tsp arrowroot or cornstarch
1 tsp apple cider vinegar
+ oil for the pan if not using a non-stick
Toppings- whatever you like! We love fresh fruit and maple syrup
Method:
Mix the wet ingredients together and set aside for 5 minutes.
Mix the dry ingredients together then gradually add the wet ingredients mixing well. Allow the batter to thicken for a few minutes before cooking.
Heat a pan, when hot turn to medium heat and add your oil if using. Add small amounts of the batter and cook until you see small bubbles forming on top- this means it's time to flip!
Stack, add your toppings and enjoy! :D
